When I was a little girl my mother taught me this recipe, of course, we called them Chocolate Mud Pies but I’m calling this alteration Birds Nest Cookies. These cookies are fairly simple to make and easily customizable, I’ve thrown in almonds, mini marshmallows, and dried fruit in the past, changing them up to fit whatever event or season I’m making them for.
Birds Nest Cookies Ingredients
- 2 Cups of Sugar
- 2/3 Cup of Milk
- 1/2 Cup of Butter or Margarine
- 2/3 Cup of Cocoa Powder
- 1 Pinch of Salt
- 1 Teaspoon Vanilla Extract
- 3 Cups Rolled Oats
- 2 Cups Coconut Flakes
- 1 bag Mini Cadbury Eggs
Birds Nest Cookies Directions
Step 1
Combine coconut flakes and rolled oats in a large bowl, mix them together and set aside. Prepare a baking tray with nonstick spray, parchment paper or aluminum foil.
Step 2
Mix the sugar, milk, butter, cocoa, and salt in a saucepan and heat to boiling. Make sure to stir frequently as the mixture heats up to prevent burning until the sugar and butter is melted and the cocoa powder is well combined.
Step 3
Once the mixture has reached boiling point stir constantly and continue to let it cook for 2-3 more minutes.
Step 4
Remove the cocoa mixture from the heat and pour into the bowl of Oats and coconut flakes. Mix until the coconut and oats are completely covered. Take spoonfuls of the mixture and place onto a previously prepared tray, working quickly before the mixture cools press a few of the mini Cadbury Eggs into the center so that they resemble birds nests.
Step 5
Place the tray in the fridge to set..or eat them warm and gooey if you so desire!
