Keto Chili – Low Carb, Big Flavor

Keto Chili

Chili is something my family is pretty serious about. It’s been a challenge to perfect the recipe so that it suits all of our tastes and we had it perfect. Down to a science. And then – We Went Keto. The Keto way of eating is great and I love it but it meant giving up our old Chili recipe! That was a sad realization – however, we didn’t stay sad for long! With a few twists and tweaks, I managed to turn our old Chili recipe into a Keto Chili Recipe. My husband loved it, my kids asked why I hadn’t made it sooner and I honestly couldn’t tell much of a difference. So we are going to call Keto Chili a win and now you can try it too!

Ingredients

Optional Toppings

  • Sour Cream – .61 grams Net Carbs per tbsp
  • Shredded Cheddar – .61g Net Carbs per 1/4 cup
  • Parmesan Crisps (instead of crackers – we use these – Oven baked Parm Crisps) >1g Net Carbs per 15 Chips

*The net carbs for any of these ingredients might vary based on the brand you buy! Make sure you check your labels and do the math on it if your brand is different. Remember to subtract the fiber from your Carb count for Net grams rather than total grams.

Serving Made – 6

Keto Chili Net Carbs per Serving

  • Without toppings – 5.75g
  • With Toppings – 7.97

Directions

  1. Brown Hamburger meat in frying pan. Drain.
  2. Open can of Diced tomatoes and blend until it is no longer chunky.
  3. Dice up your garlic clove.
  4. Open cans of Black Soybeans and Drain out the liquid.
  5. Mix everything together in a large soup pot.
  6. Add Onion powder and Reduced Sugar Ketchup.
  7. Add Hot Sauce to taste.
  8. Mix well and simmer for as long as you can stand it. Stir often.
  9. Plate and enjoy!

    1. We are Keto as well, black soy beans fit into keto macros, they are very high fiber and super low carb.

      I will look you up on twitter! Keto has been amazing for our family. The first few weeks are the hardest but once you start to feel the effects following this way of eating becomes really easy!

Just a heads up, Eden recently changed their labels to say that their black soybeans are 5 grams of net carbs per 1/2 cup serving instead of 1 gram of carbs (one half-cup serving is now listed as 11 grams of carbs and 6 grams of fiber). The company says they have not changed their recipe but that the FDA changed labeling laws. The numbers listed online are from their original labels (even the FDA says they use numbers provided by manufacturers).

    One can of Eden organic black soybeans used to be 3 net carbs according to their label, and now their label says it’s 18 net grams of carbs.

    Since they say the ingredients are the same as always, I’m kind of suspicious that they have had incorrect numbers all this time and people have inadvertently consuming way more carbs than they thought. The national nutrition database says they get their numbers from the manufacturers, so it’s Eden’s original numbers that are still online and used by most sites/apps.
